Zucchini Chips
I recently bought a dehydrator. What a great investment. I thought this would be one of those gadgets I’d use once then hide away never to see the light of day again. Since the Covid19 lockdown, I’ve been dehydrating everything I can get my hands on. It’s a great way to use up any left over veggies and fruit and save ‘just in case’.
Here is an amazing zucchini chip recipe. Perfect for the dehydrator. These are such a great gluten free and low carb snack to have on hand, especially when the boredom sets in. Use any type of spice combinations – whatever flicks your switch. Try Italian seasoning, hot and spicy or cheese and onion (using onion salt and nutritional yeast). You are only limited to your imagination.
Ingredients:
A heap-load of zucchini – sliced on the thicker setting of a food processor.
Spices of your choice – I used a mixture of paprika, chili, garlic and onion salt.
Splash of Olive Oil
Mix everything together so the zucchini slices are covered in tasty goodness. Spread evently across the dehydrator and let dry overnight. I used the medium setting, but doesn’t really matter what temperature you set it. The higher the heat, the less time you’ll need. You’ll know they are done when light and crispy!
